We all know the mechanical movment are hundreds watch parts, like springs, screws and gears. they are metal parts. so assembly then its functions. can't be accurate like Quartz powered by battery. Normally the tolerance for mechanical watch is +/- 25 seconds per day. the good watch would be control within +/- 15seconds per day. Most people can accept this tolerance. few careers need more accurate watch such as Divers, military personnel, athletes. below factors would affect the accuracy of watches
1. Temperature. we all know the movement mainly in metal watch parts. metal has features for old and hot temperature, when temperate minus 8 degree celcius, the metal inside movement will contract. when temperature over 38 degree celcius, the metal will expand. these expansion and contraction would not much, just few mm. hardly to see it by eyes. but it would affect the movement functional. Generally, too hot, you will lose the time. too cold, you will gain the time.
2. Magnetism, even 316L is non-magnetic. some brands still do the mangetism treatment. to make sure no magnetic. as Watch is very sensitive to magnetism. so make sure your watch to far away from any eletronic products such TV, phone and computer...
3. Shock, any shock of watch would or maybe damage or move the internal parts of movement. they maybe still okey to run, but not more accurate like before
4. Manual winding full mainspring energy reserve, even it is Automatic watch, no need the winding everyday. but still remember to Full mainspring by hand to rotate the crown from time to time to keep good accurate.
5. Interval service, There is maintain for Mechancial watch. oiling or clean the inside parts. normally 3-5 years per time.
